Giovanni Poli's Farm and Distillery inherits the legacy of generations of distillers from Santa Massenza in Trentino, a village synonymous with grappa. Here, the art of distillation has been a centennial tradition, and up until the 1980s, there were as many as 13 artisanal distilleries operating simultaneously in the small village of Santa Massenza. In the 1970s, Giovanni Poli, in collaboration with his fellow pioneering Italian distillers, driven by passion for his work and through intuition and the pursuit of quality, transformed grappa from a product initially considered of low value into one of great excellence. This transformation garnered recognition and success in national food and wine niches. The selection of raw materials, the adoption, and optimization of the bain-marie discontinuous still, designed by the Trentino coppersmith Tullio Zadra, allow the natural essences and fragrances of the distillates to be preserved. Giovanni Poli's distillery has maintained its philosophy and craftsmanship—essential elements for producing truly unique and valuable products—despite market demands and natural technological evolution.
The Winery
Every wine represents its place of origin, and each vineyard has its own uniqueness. Our wines fully capture the differences between various terroirs. They are produced from indigenous vineyards in the Valle dei Laghi, cultivated using natural methods according to sustainable agriculture principles, carefully vinified, and refined to enhance all their distinctive characteristics. Production is limited to ensure quality. The product of great excellence and century-old tradition is the Vino Santo Trentino Passito di Nosiola, a Slow Food Presidium.
